Spanish pastry chef Marc Suárez has unveiled a towering confection that blurs the line between patisserie and sculpture. Commissioned by a Saudi family for a royal wedding, the piece stands 3.5 metres tall and spans 1.8 metres wide, weighing 500 kilograms. It was presented at the Paris Opera Garnier for a ceremony the couple requested remain private.

Suárez, known for intricate luxury cakes, spent six weeks developing the concept and four months executing it. The project demanded roughly 1,800 hours of labour. Though he typically works alone, the scale required a team of fellow pastry chefs and their family members. Together they crafted and assembled 33,000 individual sugar-paste petals, attaching them to branching structures that give the piece its architectural presence.

Suárez told Catalan broadcaster RAC1 that the clients wanted something that did not resemble a traditional cake. They asked for a monument befitting the venue’s grandeur. The result contains barely any edible sponge; roughly 0.1 percent is actual cake. The remainder is hand-moulded sugar paste and white chocolate, shaped and painted by hand.

The project underscores a growing trend in high-end patisserie where technical skill and artistic vision converge on a monumental scale. For Suárez, it represents the largest undertaking of his career, transforming a wedding centrepiece into a temporary edible monument.
